FWIW, during my multi training in February, the instructor (and DPE) both used 20%. And obviously, that made things easier... but to be fair, we also flew with each engine feathered at least once, and my recollection is that it wasn't much different than with 15-20% (actually, it may be been more like 18% now that I think about it). Let's just say that my right calf was sore for a few days after the multi-training was completed ... I like Dave's suggestion for self-training - that should get you where you need to go.
Personally, I think the CFIs (and DPEs who give check rides in Diamonds regularly) choose whatever level turns off the gear warning as noted above. It's probably close enough from their perspective to make sure the student is using the right technique and procedures ... but it does probably give you slightly more control than if you had the engine feathered.
