On the IO360 the temperature probe is located on the top side of the oil filter adapter (so, quite a distance from your sump heater).

What is the winterization kit? I don’t think I have one. My Piper Warrior used to have a metal plate that covered part of the intake, so I’m guessing it’s something similar.

Yes, that's exactly what it is. It consists of two baffles: one that blocks airflow to the oil cooler from the air intake on the right side of the cowling, and another which blocks the air coming into the cabin vents from underneath the left wing. The former promotes higher oil temperature which helps to vaporize moisture from the engine while the latter removes a source of cold air getting into the cabin which greatly improves passenger comfort in cold weather. With that, sheepskin seat covers, and crudely improved weather stripping around the canopy, we fly at temperatures down to -30C quite comfortably.

The 53E22144 LYCOMING TEMP CONT. OIL COOL VALVE ASSY is a valve that bypasses the oil cooler at temps below 180ºf. Above 180ºf the oil runs through the oil cooler.
