Oil Temp

Quick question for the forum:
I have been reading a lot of threads on this forum (since its to cold in the East to do anything) and have come across a subject that puzzles me.
I read that a normal oil temp. would be from 180-200 and that is 'good' because at that temp it burns off any water in the oil. I have to say I have never had my oil temp go above 170 or my CHT go above 400, the latter is easy to control. I also read that guys are "taping off" half of their oil cooling radiators to achieve the 180-200. I always thought the cooler the engine runs the less wear on it over time. I never fly in a rush and truly enjoy the trip so I fly "slow and cool"...always between 3500-4500 at 2200...with a burn of around 7.2...EGT..1490...CHT...306...any comments ?
