So those of us with older aircraft (2008 XLS) that installed GTX345R's do not have this bug at all? Or just that we are free to have it updated without Diamond signoff? I think you mean the latter, correct?

Yes, the latter. If you have the 345 by STC, your shop can get the update directly from Garmin. You need the version specified in the attachment in the first post.

How do we tell what version we have right now? Is that relayed to the G1000 aux page, or do we need to connect directly to the 345?

TAS is not affected. Those targets will always be displayed, as per the SB.
